I am in love with egg salad.
Idk why, but I really just absolutely love it. I could eat it everyday and never get sick of it.
Arthur hates it. He thinks it smells disgusting and the texture is weird, and can’t stand when I make it.
About a week ago, I was making my very delicious egg salad for this very post listening to Arthur complain about it and sneaking bites as I took pictures and decided that I was going to force him to try my recipe out.
I made an open faced sandwich, and basically shoved it in his face.
He fucking LOVED it!
No joke. He said “wow, this is actually really really good”.
So, I give you the recipe that changed the way an egg salad hater thought about egg salad.
Let me tell you before I share the recipe that I am not a measuring type of person. I literally just eyeball the shit that goes into this and taste it as I go until it tastes good to me. So you’ll have to do the same.
The BEST Egg Salad
• 5-6 eggs, boiled & peeled
• Dry Mustard
• Whole Grain Bread
• Organic Mayo
• In a bowl, whisk together everything but the bread, until it’s a mostly creamy, but chunky consistency.
• Spoon it into your bread, and either make it into a full on sandwich, or keep it open-faced.
I had to double this recipe because I literally will eat it all in one day.
